Green Cookies

Gabe and I are responsible for bringing *green cookies* to his school's St. Patrick's Day party.

I decided to go simple:

1 box of white cake mix

2 eggs

1/2 cup butter at room temperature

green food coloring

buttercream frosting (I cheated and used a tub)

Combine the cake mix, eggs and butter.

Add 50 drops of food coloring (sounds like a lot, but really, I should probably have used even more).

Bake rounded teaspoons of dough at 350' for 9 minutes.

Let them cool and set.

Sandwich two cookies around a layer of buttercream frosting.

Resist your child's pleas to have one in the middle of the afternoon.
