This begs the question, why plant tomatoes? Well, we are relatively new to gardening and tomatoes happen to be incredibly easy to grow. I like to think of them as confidence-building plants. They make us feel like gardening super-stars.
So first up in my 'don't let this produce go to waste plan' is tomato soup.
Basil, tomatoes and red peppers fresh from the garden.
So pretty - vibrant red, brilliant green. And the smell is AMAZING.
Let me just say it again, the Vitamix is the best kitchen appliance purchase EVER. It took this gorgeous produce and turned it into piping hot (yep, no need to heat on the stove - the blades of the mixer create enough friction to heat/cook completely), healthy soup in a matter of minutes. I just halved or quartered the tomatoes and seeded the peppers. The mixer did everything else.
Steaming and frothy in just about four minutes. At this point, my children and myself were totally drooling over the tantalizing kitchen aroma. I threw in a little sea salt, some black pepper, garlic and a hunk of pepperjack cheese from S. Clyde Weaver's. Blended it again for about two minutes.
And done. Start (picking the produce from the garden) to finish (pouring the finished soup into freezer storage containers and rinsing out the blender) this took less than 15 minutes. I did make multiple batches, so maybe all in all to get my 12 quarts of soup, I spent 45 minutes in the kitchen. Well worth it!
Tomato Pepperjack Soup
makes 3-4 quarts
5 tomatoes (halved)
2 red peppers (seeded)
6-8 basil leaves
1 cup of soymilk
2 whole cloves of garlic
1 tsp sea salt
1/2 tsp of black pepper
2 cups pepperjack cheese
Vitamix together and enjoy!
