Rainy Day Project

Lily was sick over the weekend, so we didn't really leave the house. Followed by the rainy weather week - this mama was feeling stir crazy. At the end of my list of indoor activities for Gabe (and admittedly, my patience was also wearing thin), I raided the cupboard and we made these yummy chocolate caramel cookies.

They are from Simple and Delicious magazine, which I love! Very affordable, very easy, very family friendly, always lots of good baked items. S & D is a member of the Taste of Home family of magazines. LCBC is hosting a Taste of Home cooking school on 10/6. You just might see me there!

We stuck to the recipe for the most part, eliminating the hazelnuts b/c my picky husband doesn't eat them.


Unwrapping the Rolos was the longest process.


'You mean I can eat one!?'


The dough is CRAZY sticky, so we dropped our teaspoon-fuls first, then Gabe stuck a Rolo in.


The texture of the dough made this micro-managing mom nervous, so I took over rolling the Rolos into the batter.
