Freezer Cooking

I was hired to do some work for the PA Department of Welfare (teaching/leading and ECE curriculum development). This meant dinner time would be a little more hectic in the Thompson household. To help Tim out - poor guy responsible for meals for the first time in our marriage - I decided to try my hand at freezer cooking.

It's never been my thing in the past, but with three weeks of late nights for Mommy, seemed worth trying again.

So I booked one Saturday for making up the following recipes:

2 batches of chocolate-pumpkin bread

1 batch of lemon poppy seed muffins

2 batches of corn muffins (Gabe's favorite)

Tex-Mex Mac'n'Cheese - stole from an old friend's blog, delicious and Tim's favorite!

Baked Mac'n'Cheese - the good stuff w/ whole wheat noodles, sharp cheddar cheese, an egg, evaporated milk and sprinkled with italian style bread crumbs

Chicken Etti - say what you will about the Duggars, this is a yummy recipe.

Cumin Chili - SOOOO good if you groove on cumin

(If you know and love me, you know I didn't use any onions in these recipes.)

My kitchen was a disaster by the end, and much to my dismay, no one in the house offered to help me with the dishes. (Ironically, Tim did suggest we order a pizza for dinner that evening.)

Each week day, Tim just had to reheat a pan in the oven and steam some fresh veggies as a side. I don't think this style of cooking is ideal for our family, but it was a convenience in the last few weeks.
